Bride’s Cookies – 12 Days of Cookies

We used to get almond cookies from the Italian bakeries in my neighborhood as a kid. I remember licking the powdered sugar off my fingertips as it showered down from each bite, like little drifts of snow.
This version, made with pecans, is as delicious as every memory. They crumble perfectly and melt away on my tongue, coating my mouth with sugar. And sifting the powdered sugar over the tray of warm cookies still looks like snow.
Pastellitos De Boda – Bride’s Cookies
from Gourmet, November 1986
Makes about 24 cookies.
2 cups all-purpose flour
1/2 cup powdered sugar, sifted, plus additional for dusting the cookies
1 cup pecans, finely ground in a food processor
2 teaspoons vanilla
1 cup unsalted butter, softened
1. In a bowl sift together the flour, 1/2 cup of the confectioners’ sugar, the pecans and a pinch of salt, stir in the vanilla, and blend in the butter until the mixture is combined well.
2. Preheat the oven to 350F. Scoop out rounded tablespoons of the mixture, form them into 1/4-inch-thick rounds. Bake for 10 to 12 minutes, or until they are golden around the edges. Once the cookies are cooled, dust them with the additional powdered sugar.
