Cornbread Muffins – Bread Baker’s Apprentice

These muffins have bacon in them.

Need I say more?

I actually was a bit nervous about the bacon at first.  I couldn’t taste it in my mind’s…mouth.  But I decided to go ahead with it, keeping to the sense of experimentation this whole project has given me.

The instructions said to cook the bacon, use the fat to grease the tins, then press the bacon into the top.  I skipped greasing the tins with the fat, because I wanted a few plain ones, but the rest I followed to the letter.

Man, are they good.

Not my favorite – mostly because after one or two, I didn’t really crave them anymore.  But the whole pieces of corn, mixed with a touch of honey and then salty bacon?  Not much better than that.   They are on the Thanksgiving list for certain, next to some sweet potato rolls, and are also good with a bit of cream cheese for a savory breakfast.
