		<description>i&#039;ve sometimes made &#039;salade lyonaise,&#039; which is basically a poached egg on frisee.  plus a little crumbled bacon.  poached egg in salad is a good thing.  i&#039;m always torn between my desire not to mess up the pretty poached egg and my desire to at least pat it dry with a paper towel...sometimes there&#039;s a bit of water.  i&#039;ll try the jiggle technique next time.</description>
